Tomatoe, Toomato

Which vegetable is one of the most consumed vegetables in the United States? Tomatoes. Tomatoes contain a phytochemical called lycopene. Lycopene has properties that are extremely anti-cancer. Tomatoes have also been shown to help protect against skin damage from the sun. They also help digestion and are very high in many vitamins and minerals including C, K, E and B. Tomatoes should not be kept refridgerated. The lower temperature keeps them from ripening. If you want to ripen tomatoes, place them in a brown paper bag with a banana. The banana gives off a gas that speeds up the ripening process. Once a tomatoe ripens it can be stored in the fridge for a day or two. Tomatoes offer tremendous health benefits whether consumed as a sauce, juice or whole. New Jersey Tomato sandwiches on toast with salt and pepper and a dash of mayonaise prove that God loves us.
